Liz’ Lemon Squares

Crust:
206g/1 c butter
125g/1/2 c sugar
340g/ 2c flour

Steps:
Cream butter and sugar until fluffy. Gradually add the flour until it is dry-looking and very crumbly. Press evenly into a cake pan. Bake until golden at edges. Cool for 15 minutes.

Filling:
360g/1 1/2 c sugar
4 eggs
6 ½ tbsp lemon juice
4 tbsp flour
½ tsp baking powder

Steps:
Beat ingredients together. Pour over slightly cooled crust. Bake until set and golden. Let cool in pan 15 minutes. Move to a stable surface, dust with icing sugar, and cut into squares. Refrigerate.
