This is a very moist and tasty cake. The original recipe that I found on the Taste of Home website provides a nice moist, if somewhat mild cake. I think it is perfect for the British palate as most of the cakes I have had here are less sweet than the North American equivalent. I remade the recipe some to work more with the North American taste, meaning a sweeter and more chocolatey. I will post both recipes, alterations to make the sweeter version will be in ( ).
1 c/ 160g plain flour
1 c/ 210g white sugar (add 1/2c or 110g for sweeter cake)
1 c/ 240ml hot water (replace the water with strong coffee)
1/2 c / 50g cocoa powder
1 tsp baking powder
1 tsp baking soda/bicarbonate of soda
1/4 c / 60g butter or margarine, weighed then melted
Mix all the Dry ingredients together, then add the hot water (strong coffee) and mix till moist. Add the egg and mix in completely. Add the melted butter/margarine last and mix till glossy and smooth. Pour into a greased 9×9(in)/23×23(cm) pan and bake on 250 F/ 115 C for 30 min or until toothpick inserted in the middle comes out clean.
