Grandmother’s Potato Salad

IMG_0475Several years ago I decided I wanted to make my own potato salad, and since I always loved my Grandmother’s Potato salad I decided to call her for her recipe. She just laughed when I asked for the recipe, she never had a recipe! She just tossed in what what looked good, but she did give the list of what almost always made it into the bowl. From that I have created this recipe.

Ingredients

5 small potatoes/590g potatoes

1/2 a medium onion/60g finely chopped onion

55g sweet pickles, (3 spears or 5 to 6 small gherkins) chopped small

55 g celery (1 to 2 spears, chopped small)

2 large hard boiled eggs chopped

1/2c/125 ml mayonnaise (I use the extra light version since I prefer the flavor)

1 tbsp mustard

1 tbsp pickle juice

a light dusting of cayenne pepper, paprika, and a small dash of salt and pepper.

Directions

IMG_0468Chop the potatoes into bite sized pieces and boil until tender. Rinse in cold water.
IMG_0470Pour into a large mixing bowl, and add the other ingredients. Mix till everything is combined then Refrigerate until cold all the way through.

This makes enough for a side salad for 4 people.
