I found this recipe on the BBC Good Food
website. I loved it, it was so tasty. I cut down the pasta to make it the right size for 2 people but made the sauce as the recipe said and it was the perfect amount for the pasta I made. Here is the original recipe
400g (I used 200g) linguine or spaghetti
90g pack prosciutto or bacon of your choice
1 tbsp olive oil
juice 1 lemon/ about 1 tbsp
2 egg yolks
3 tbsp crème fraîche
large handful basil leaves
large handful grated Parmesan, plus extra to serve, if you like(40 g)
Cook the bacon.
Cook the pasta. Retain some of the pasta water for the sauce.
Separate the eggs and place the yolks in a bowl.
Add the crème fraîche to the yolks.
Add the Lemon Juice and 30g Parmesan, and mix.
Drain the pasta and return it to the pan. Add the bacon to the drained pasta. Pour the sauce over the pasta and mix, adding some of the pasta water to make the creamy sauce coat the pasta and bacon. Wash your fresh basil leaves (I used 9 of them) and chop them and add them to the pasta mix. Heat the pasta mix over low heat to bring all the flavors together.
