Salted Caramel Banana Cake (Banoffee Marshmallow Cake)

IMG_0628This is a recipe I discovered when hunting for the perfect birthday cake for my husband. I found the original recipe here, but like most recipes I fiddled with it a bit. We really really loved the outcome!

Ingredients

Cake

165g/3/4c butter

164g/3/4c packed light brown sugar

325g/2 1/4c self rising flour

1 heaped teaspoon baking powder

2 level teaspoons cinnamon

4 large eggs

4 tbsp milk

3 banana’s

Frosting and Filling

4 cups whipped cream (600ml double cream whipped)

1 banana

1 handful of mini marshmallows plus more for decorating

1 small can/397g Caramel Sauce ( I used Carnation Caramel)

Course Sea Salt

Directions

Cake 

IMG_0619Cream the Butter and Brown Sugar in a large bowl.
IMG_0617Sift the flour, baking powder, and cinnamon into a smaller bowl.
IMG_0621Add the eggs one at a time to the Creamed butter and sugar mix, with each egg addition add 1 tbsp of the sifted flour mix.
IMG_0622Mix the milk into the creamed mix.
DSCF2792Mix the rest of the sifted mix into the creamed mix in 3 small batches.
DSCF2793Mash the bananas and mix into the batter.
DSCF2795Grease 2 8in/20cm round cake pans and evenly divide the batter into them, smoothing the top.

Bake at 325F/150C. Then cool in pan for 10 minutes, then turn out onto racks to finish cooling.

Frosting and Filling

DSCF2802In a small bowl add 2 cups of the whipped cream, the chopped banana and the small handful of the marshmallows and stir to coat.
DSCF2800In another small bowl add the can of caramel and 1 cup of the whipped topping and mix till smooth.
DSCF2799Spread some caramel caramel sauce on the the first layer of the cake and lightly sprinkle with course sea salt.
DSCF2803Spoon the Whipped Cream mix on top of the caramel sauce.
DSCF2804Place the second cake on top of the filling.
DSCF2805Pour the rest of the Caramel Sauce onto the top of the cake and allow it to drizzle down the sides.

Lightly salt the top of the cake and decorate with mini marshmallows. Refrigerate before serving and refrigerate any leftovers.

There will be 2 cups of whipped cream left for decorating if you would like.
