Miracles do not, in fact, break the laws of nature. C. S. Lewis

The title of the post means that I finally found a job! After a year and 9 months of searching I am now working regular hours and loving it! As such I will be taking a 2 week break while my body and mind adjust to the new schedule. During that time I will be cooking and prepping new posts so I have a small stockpile of posts built up for times when I am working more overtime hours and less time to cook. I will be back to my regular 2 time a week posting on October 2nd. I love my blog, and sharing recipes with everyone and I promise you that I have some great recipes lined up to share when I get back. As always if you have a recipe you would like to see converted please send it to me and I will work it into the rotation. See you all soon!

4 large eggs

1/4c/60ml Mayonnaise or Miracle Whip

1 tsp/5ml yellow American style mustard (if using English Mustard or Dijon use 1/4 tsp)

Grandmother’s Potato Salad

IMG_0475Several years ago I decided I wanted to make my own potato salad, and since I always loved my Grandmother’s Potato salad I decided to call her for her recipe. She just laughed when I asked for the recipe, she never had a recipe! She just tossed in what what looked good, but she did give the list of what almost always made it into the bowl. From that I have created this recipe.

Ingredients

5 small potatoes/590g potatoes

1/2 a medium onion/60g finely chopped onion

55g sweet pickles, (3 spears or 5 to 6 small gherkins) chopped small

55 g celery (1 to 2 spears, chopped small)

2 large hard boiled eggs chopped

1/2c/125 ml mayonnaise (I use the extra light version since I prefer the flavor)

1 tbsp mustard

1 tbsp pickle juice

a light dusting of cayenne pepper, paprika, and a small dash of salt and pepper.
