Fajitas

IMG_0481I love Fajitas, they are a quick and fun meal that really satisfies.

Ingredients

2 bell peppers (I like to get different colors to add fun)

1 medium onion

500g/ 1lb steak strips (or chicken if you like)

Taco/Fajita Seasoning

Tortillas

Sour(ed) Cream

Shred(ed) Cheese (I like a sharp (old) cheddar)

Spicy Boneless Chicken Wings

IMG_0474These are a favorite for my husband and I, they have a nice amount of spice and a wonderful flavor.

Ingredients

1 Kg/2lbs boneless skinless chicken breasts

Sauce

2c/680g Ketchup

1c/215g Brown Sugar ( if you want it really spicy use light brown sugar, if you want it milder then use dark brown sugar)

1/2c/148ml hot sauce ( I use Franks Red Hot Original, but I think any Cayenne based hot sauce would work)

1/3c/80ml Worcestershire Sauce

2 tsp chili powder (heaping)

2 tsp onion powder (heaping)

2tsp cayenne powder (heaping)

2 tsp paprika (heaping)

Salsa Chicken Wraps

IMG_0071   This is one of our favorite meals. It is simple and easy, and fun to eat.

Ingredients

4 chicken breasts

2 to 4 cups salsa (doesn’t need to be exact, just enough to completely cover the chicken breasts)

flour tortillas

lettuce

tomato

onions

cheese of your choice (we prefer old/mature cheddar)

sour cream

chips (optional)
