The title of the post means that I finally found a job! After a year and 9 months of searching I am now working regular hours and loving it! As such I will be taking a 2 week break while my body and mind adjust to the new schedule. During that time I will be cooking and prepping new posts so I have a small stockpile of posts built up for times when I am working more overtime hours and less time to cook. I will be back to my regular 2 time a week posting on October 2nd. I love my blog, and sharing recipes with everyone and I promise you that I have some great recipes lined up to share when I get back. Tuna Salad, Tuna Mayo

IMG_0588This is my favorite recipe for Tuna Salad, Tuna Mayo. It makes for a great quick and easy lunch.

 

Ingredients

2 cans( 278g/9.8oz) Tuna in water, drained

1/3c onion chopped fine

1/3c celery chopped fine

1/2 c/125ml Mayonnaise or Miracle Whip

2 medium/ 50g Pickled Cucumbers

Banana Bread

IMG_0171This is my mother’s recipe, she picked it up from a friend who served this as a dessert at a dinner party accompanied with a scoop of vanilla ice cream. It has since been published in several Church Cookbooks and passed around among friends and family. I hope you enjoy it as much as we do.

Ingredients

2 cups/340g flour

1c/230g sugar

1/2 tsp salt

1 tsp baking soda/bicarbonate of soda

1 tsp baking powder

2/3 c/157ml vegetable oil

3 large eggs

1/2c/115g sour(ed) cream

1c/270g mashed banana

1c/100g nut of your choice ( I like walnut pieces, though pecan is very good as well)
