Mushroom and Thyme Risotto

IMG_0602This is a recipe I found on the BBC Good Food Website. It made for a wonderful lunch one weekend. This was the first time I made a risotto and it turned out perfectly. It takes time to make, at least 20 minutes once you start adding the broth, but I feel it was well worth the time it took. Here is the link for the original recipe.

Ingredients

1 tbsp olive oil

350g/(about 6 to 8 palm sized) chestnut mushrooms, sliced

100g/1/4cups quinoa

1l/4 cups hot vegetable stock

175g/1/2cup risotto rice

handful thyme leaves/ 1 tbsp

handful grated Parmesan or vegetarian alternative

Creamy Linguine with Bacon and Basil

IMG_0616I found this recipe on the BBC Good Food website. I loved it, it was so tasty. I cut down the pasta to make it the right size for 2 people but made the sauce as the recipe said and it was the perfect amount for the pasta I made. Here is the original recipe.

Ingredients

400g (I used 200g) linguine or spaghetti
90g pack prosciutto or bacon of your choice
1 tbsp olive oil
juice 1 lemon/ about 1 tbsp
2 egg yolks
3 tbsp crème fraîche
large handful basil leaves
large handful grated Parmesan, plus extra to serve, if you like(40 g)

Macaroni and Cheese Casserole

IMG_0560I made Macaroni and Cheese Casserole fairly often, always changing the cheese combination and spices till I made this combination. My husband took one bite, got up and handed me a pen and paper and asked me to write down the recipe. That from now on when he wants Mac and Cheese he wants this combination. This is a great make ahead Casserole, it refrigerates and freezes well with just a bit of time in the oven to warm through. The wonderful thing about Macaroni and Cheese is that you have any combination of cheese you like, the cheese I have listed is just a suggestion feel free to pick your own favorites.

 

 

Ingredients

1 small block (240g) Cheddar

1 small block (240g) Emmental

1 small block (240g) Gruyere

1 small bag(50g) grated Parmesan

1/2 a sleeve of Chili Crackers(or your favorite flavor)

2 ham steaks (or 2 boneless skinless chicken breasts)

1 small onion

2 tbsp butter

1 tbsp flour

2 chicken bullion cube

1 package (500g/1lb) macaroni noodles

2 tsp chili powder

black pepper
